Maryland's state crab

The blue crab is the state crustacean of Md.

Colors

Blue crabs are blue because their shell contains a number of pigments, including Alpha-crustacyanin, which interacts with a red pigment, astaxanthin, to form a greenish-blue coloration. When the crab is cooked, the Alpha-crustacyanin breaks down, leaving only the astaxanthin, which turns the crab red-orange.

Taste

Crab meat is high in vitamin B12. Just three ounces of crab meat contain a full day's allowance!

Found

Between Maryland and Virginia, the Chesapeake Bay is famous for its blue crabs. The blue crab is found all the way from up north in Nova Scotia all the way down to Argentina.

Bait

The blue crab is an omnivore, eating both plants and animals. Blue crabs typically consume thin-shelled bivalves, annelids, small fish, plants and nearly any other item they can find, including carrion and other blue crabs.
